Yarg (v)
Medium strength, pressed cheese wrapped in nettles which contrast with the white interior. Fresh and lemony, softens and develops more character with age. Suitable for vegetarians.
The term 'washed rind' means that in the process of making the cheese, the cheese is washed in wine, beer, herbs, or whatever, and this has the effect of preserving the cheese, also helping it to develop more flavour along the lines of what it is washed in. This also this gives a pungent aroma to the cheese.
